Simchat Torah is celebrated joyously with hakafot (parades with the Torah), flags and sweets. Torah is at the center of Judaism and, on this holiday, we honor both its roots and its flexibility. After parading with the scrolls, we will read the end of the book of Deuteronomy and immediately start over with the beginning of the book of Genesis. As we put the scrolls away, we will change them back to their beautiful year-round covers and put away our new High Holy Day covers for the first time.
