We will make Almond Raspberry Hamantaschen with Gail Sokol
Gail Sokol is an award-winning chef and author who was an instructor in the Culinary Arts program at SUNY Schenectady for 18 years, where she directed the Professional Baking with Kids Program for 20 years. She taught Food Science and Quantity Foods as an instructor in the Nutrition Department of Sage College for 5 years. Chef Sokol is the author of “About Professional Baking” and “Baking with Success.”
You will need: For the Cookie Dough
½ cup (8 tablespoons) unsalted butter, softened
¼ cup granulated sugar
1 ½ cups all-purpose flour, plus more for dusting
½ teaspoon baking powder
1 large egg yolk
4 tablespoons heavy cream,
plus 1-2 teaspoons more if the dough is too dry
1 large egg, beaten with a fork, to be used as an egg wash
For the Filling (or your own filling)
1 8-ounce package almond paste
1/3 cup granulated sugar
2 large egg whites
Approximately 1/3 cup raspberry jam
An electric mixer and a food processor will be needed during the class.
